Don't know if this has been brought up before, but I'd like to be able to try plays in the chalkboard editor with seperate teams/playbooks on offense and defense. Importing is an option, but it takes time, and it doesn't accurately show how a given play works on its native team. Example- I'd like to try my new running play against a different defensive playbook and team, since my defensive style is very different than that of my opponents.
Or is this not available because the "practice field" is by definition one team, like in real life?

There are a couple of issues here that you're dealing with. The first is that your opponent's playbook will likely be locked so you can't open it to view the plays in the chalkboard editor. The second is that yes, this is a practice field just like the real one. If you want to simulate your opponent, then create a team file with the defensive players composed of your opponent's players and then create similar defensive plays to that opponent to run against. Consider it your second or third string playing the role of a scout team.
