Roster number

My windows version came with a 30 player roster. How do teams in the leagues expand the roster to include a larger number of players?

It's a virtual roster... Meaning just because a guy isn't presently on the field, he can still be on your team.  There are also a # of hidden slots made available with a few tools or assist from web sites.  Being able to access the hidden slots it is possible for 42 players to appear in your teamfile. 

Check out pmfb.net/spmfbl/rosters to see what I was talking about regarding websites and rosters.  Also, if you are still interested include your email and I can send you an application called teamedit that will allow you to access the hidden slots yourself (though you would still need to purchase pc bench for $5 or have somebody that has access (mac guys) to change over your plays to access those hidden slots.

How does a person on a MAC access a playbook written on a PC (or visa-a-versa)?

If you're on a Mac and want to access a PC playbook just drop the playbook (and team file) on the PC-to-Mac convertor app that came with PMFB. If you are on Windows and want to access a Mac playbook just add a .fbp extension on the playbook (.fbt for the team file).
